Lagers and [[Ale|ales]] differ primarily in the type of yeast employed and the fermentation temperature. Originally all beers were basically ales. It was not until the 19th century in Bavaria that Lagers began to be produced. Since then the category has enjoyed enormous popularity and lager now produces the higher total volume.
